The company guarantees complete traceability from individual farmer lots to the final brewed cup, ensuring accountability, transparency, and product integrity at every stage. Quality control is implemented across five critical stages: farm production, processing, dry milling and storage, roasting, and brewing/retail. At the farm level, only 100% Arabica coffee primarily Bourbon varieties grown at 1,700–2,000 MASL is accepted. Strict harvesting protocols ensure that only red-ripe cherries are selected, verified through density testing and daily inspection, with full rejection procedures for substandard cherries. Each delivery is recorded under a traceable lot system including farmer identification, origin, harvest date, and quality grading.

Processing operations are tightly controlled, requiring pulping within six hours of harvest, monitored fermentation (pH and time), and the use of clean water and standardized washing procedures. Drying is conducted exclusively on raised African beds for 18–25 days, with continuous monitoring to achieve optimal moisture content (11–12.9%), verified using calibrated moisture meters. Quality testing includes
green grading, screen sizing, defect analysis, sample roasting, and documented cupping scores.

In storage and dry milling, strict environmental controls are maintained, including humidity levels of 50– 60% and temperatures between 18 24°C. Coffee is stored in hermetic bags on raised pallets using FIFO inventory systems, with regular pest inspections to prevent contamination. Roasting operations follow precise digital profiling, including roast curve monitoring, batch tracking, color measurement, and controlled degassing, ensuring consistency across all batches. Each roast undergoes post-roast cupping, defect inspection, and brew performance testing.

At the brewing and retail level, trained and certified baristas follow standardized brewing ratios, daily espresso calibration, grinder adjustments, and water quality testing to maintain consistency in the final cup. Sensory quality is continuously monitored through daily tasting logs, customer feedback systems, and monthly quality review meetings.

A dedicated Coffee Quality Control Unit oversees all quality-related activities, including lot approval, cupping calibration, deviation reporting, and risk management.
